Turkey Chili
Pasture-raised ground turkey is leaner than beef but still full of flavor. A spiced chili is the perfect showcase. Keep the heat medium so it doesn't dry out, then let it simmer into something thick and hearty. A weeknight staple that reheats beautifully.

Ingredients

  • (2 lb) Ground Turkey
  • (2 tbsp) Oil
  • (1) Diced onion
  • (3) Garlic cloves
  • (2 tbsp) Chili powder
  • (1 tbsp) Cumin
  • (1 can (15 oz)) Diced tomatoes
  • (1 can (15 oz)) Beans
  • (2 cups) Beef broth
  • Salt

Directions

  1. Brown: Brown the turkey in oil over medium-high, breaking it up, until the edges catch color.
  2. Build the base: Add the onion and cook until soft, then the garlic, chili powder, and cumin for 1 minute.
  3. Add liquids: Stir in the tomatoes, beans, and broth.
  4. Simmer: Simmer 30–40 minutes until thickened, stirring now and then.
  5. Finish: Season with salt and serve with your favorite toppings.

    Notes

    Keep the heat at medium so the lean turkey stays moist rather than drying out. Like most chili, it's even better the next day.
