Braised Chicken Gizzards

Gizzards are lean, high-protein muscle that reward a low, slow cook. Braised until tender, they turn rich and hearty. From pasture-raised birds, they're honest, traceable protein. They're also an excellent addition to a dog's diet.

Ingredients
- (1 lb) Chicken Gizzards
- (2 tbsp) Oil
- (1) Onion
- (2) Garlic cloves
- (2 cups) Broth
- Salt and pepper
Directions
- Brown: Brown the gizzards in oil, then add the onion and garlic.
- Add broth: Pour in the broth to cover and season.
- Braise: Cover and simmer low 1.5β2 hours until fork-tender.
- Finish: Reduce the liquid into a sauce, or shred for tacos.
Notes
Gizzards are tough until they're not. A full low braise is what turns them tender. For a dog treat, skip the oil, onion, and garlic and cook them plain.
