November 6, 2026 • 0 comments
Many folks shy away from chicken with the skin on and bone in because they’re just not used to cooking it that way. We’ve got a chef’s foolproof method for cooking flavorful skin-on, bone-in thighs. Skin gets crispy, meat stays juicy, and you’ve got a base to do whatever you like with. Pair it with this easy garlic and herb feta sauce, thrown in a blender while the chicken cooks, or eat it on its own. Quality meat and good technique speak for themselves here.
- Prep Time:
- Cook Time:
- Servings: 2-4
Ingredients
- (2-4) Chicken Thighs (Bone-In)
- (1/3 Cup) Olive Oil
- (1/3 Cup) Fresh Parsley
- (1/3 Cup) Fresh Dill
- (4 oz) Feta Cheese (Sub 1/3 Cup Greek Yogurt If Preferred)
- (1/3 Cup) Green Onions
- (3 Large) Garlic Cloves
- (Juice of 1) Lemon
- (1 Tsp) Salt
- (1/2 Tsp) Black Pepper
Directions
For the chicken:
- Pat dry 2-4 chicken thighs. Make sure it’s really dry, and the skin will be crispy. Season with salt and pepper, and give it a flip skin-side down. Use a small knife to poke some holes through the meat. The heat will get through all the chicken and make sure it’s cooked just right. Season the meat side with salt and pepper.
- Oil a pan, and leave the heat OFF for now. Lay the thighs skin-side down and give them all some room to breathe. Starting the chicken skin down in a cold pan will render the fat slowly and make sure it gets that delicious crisp.
- Turn the heat on medium low and let the chicken cook undisturbed for 12-18 minutes depending on the size of the thighs. Make your sauce while it sizzles.
- When the skin is nice and brown, flip it over and let it finish cooking. It should reach 165*F near the bone when it’s done.
- Serve hot and juicy over vegetables, with sauce, or however you like it.
For the sauce:
- Rough chop garlic, dill, parsley, and green onions. Cube feta.
- In a blender, add olive oil, garlic, dill, parsley, green onions, lemon juice, salt, pepper, and feta.
- Blend until smooth. Keep leftovers refrigerated.
