Directions

  • 2 pasture-raised chicken breasts from 2 Coots Ranch
  • 1 tbsp extra virgin olive oil or grass-fed butter
  • 1 garlic clove, minced
  • 1 lemon (zested and juiced)
  • 1 tsp fresh thyme (or ½ tsp dried thyme)
  • 1 tsp fresh rosemary, chopped (or ½ tsp dried rosemary)
  • Sea salt and freshly cracked black pepper to taste
  • Optional: 1 tbsp honey or maple syrup for a touch of sweetness

Instructions:

  1. Prepare the chicken: Pat the chicken breasts dry with paper towels to ensure a good sear. Season both sides generously with sea salt and black pepper.
  2. Heat the pan: In a large skillet, heat the olive oil or grass-fed butter over medium-high heat until hot and shimmering.
  3. Sear the chicken: Add the chicken breasts to the skillet, cooking for 6-7 minutes on each side, or until golden brown and the internal temperature reaches 165°F (75°C). Remove the chicken from the pan and set it aside to rest.
