2 Coots Ranch Lemon Curd (aka Sunshine in a Jar)
This bright, tangy lemon curd puts our golden-yolked, pasture-raised eggs front and center. Rich, smooth, and bursting with citrusy goodness, it’s perfect on toast, in desserts, or straight from the spoon. Sunshine in a jar — courtesy of the hens at 2 Coots Ranch!

Directions

Ingredients:

  • 4 large 2 Coots Ranch egg yolks
  • 2 whole 2 Coots Ranch eggs
  • 3/4 cup granulated sugar
  • 1/2 cup fresh lemon juice (about 3–4 lemons)
  • 1 tbsp finely grated lemon zest
  • 6 tbsp unsalted butter, cut into chunks
  • Pinch of salt

Directions:

  1. Whisk It Good: In a medium saucepan (not over heat yet!), whisk together the egg yolks, whole eggs, sugar, lemon juice, zest, and salt until smooth.
  2. Low and Slow: Set the pan over medium-low heat and cook, whisking constantly. Don't wander off — this curd needs love and attention! Stir until it thickens to a custard-like consistency (about 8–10 minutes). It should coat the back of a spoon.
  3. Butter Me Up: Remove from heat and immediately whisk in the butter, one chunk at a time, until fully melted and incorporated.
  4. Strain (Optional but Fancy): For extra silky curd, strain through a fine mesh sieve into a clean bowl or jar.
  5. Cool & Chill: Let it cool to room temp, then pop it in the fridge. It’ll thicken more as it chills.
