This bright, tangy lemon curd puts our golden-yolked, pasture-raised eggs front and center. Rich, smooth, and bursting with citrusy goodness, it’s perfect on toast, in desserts, or straight from the spoon. Sunshine in a jar — courtesy of the hens at 2 Coots Ranch!

Directions
Ingredients:
- 4 large 2 Coots Ranch egg yolks
- 2 whole 2 Coots Ranch eggs
- 3/4 cup granulated sugar
- 1/2 cup fresh lemon juice (about 3–4 lemons)
- 1 tbsp finely grated lemon zest
- 6 tbsp unsalted butter, cut into chunks
- Pinch of salt
Directions:
- Whisk It Good: In a medium saucepan (not over heat yet!), whisk together the egg yolks, whole eggs, sugar, lemon juice, zest, and salt until smooth.
- Low and Slow: Set the pan over medium-low heat and cook, whisking constantly. Don't wander off — this curd needs love and attention! Stir until it thickens to a custard-like consistency (about 8–10 minutes). It should coat the back of a spoon.
- Butter Me Up: Remove from heat and immediately whisk in the butter, one chunk at a time, until fully melted and incorporated.
- Strain (Optional but Fancy): For extra silky curd, strain through a fine mesh sieve into a clean bowl or jar.
- Cool & Chill: Let it cool to room temp, then pop it in the fridge. It’ll thicken more as it chills.
