Oven Roasted Lemon Butter Oregano Chicken
Pasture-raised chicken breasts are leaner than conventional, so the sear-then-roast method keeps them juicy: a hot skillet crisps the skin, then a gentle oven finish cooks the meat through without drying it out. A bright lemon-oregano butter does double duty. Seasoning the pan as it roasts and saucing the chicken at the end. The real secret is pulling it at 162–163°F and letting carryover heat carry it to a perfect 165°F. Simple ingredients, restaurant results.

Ingredients

  • (2) Chicken Breasts
  • (1 tbsp) Ghee or high-heat cooking oil
  • Sea salt and freshly cracked black pepper
  • (1/2 cup (1 stick)) Unsalted butter
  • (3 tbsp) Fresh lemon juice (about 1 medium lemon)
  • (1 clove) (Optional) Garlic, finely minced
  • (1 tbsp) Fresh oregano leaves, roughly chopped
  • (1/2 tsp) Kosher salt

Directions

  1. Prep: Preheat the oven to 400°F. Pat the chicken breasts thoroughly dry with paper towels and season both sides generously with sea salt and black pepper.
  2. Make the butter sauce: In a small saucepan over low heat, melt the butter. Add the garlic (if using) and cook 1 minute until fragrant. Stir in the lemon juice, oregano, and 1/2 tsp salt, simmer gently 5–10 minutes, then remove from heat.
  3. Sear the skin: Heat the ghee in a large oven-safe skillet (cast iron or stainless) over medium to medium-high heat. Place the chicken skin-side down and sear undisturbed 4–5 minutes, until the skin is crisp and golden.
  4. Add sauce and flip: Reduce the heat to medium. Flip the chicken skin-side up and pour half the warm butter sauce into the skillet around the chicken.
  5. Roast: Transfer the skillet to the oven and roast 18–22 minutes, checking the internal temperature at the thickest part of the breast starting at the 15–18 minute mark.
  6. Rest: Pull the chicken as soon as the center reaches 162–163°F. Rest on a cutting board 5–7 minutes — carryover heat finishes it at 165°F while locking in the juices.
  7. Slice and serve: Slice the breasts and spoon the remaining warm butter sauce over the top right before serving.

Notes

Total cook time runs about 22–27 minutes: 5 minutes on the stovetop plus 18–22 in the oven. Pulling the chicken at 162–163°F is the trick to juicy meat. Carryover heat takes it safely to 165°F as it rests. Great with rice, roasted potatoes, or any veggies. Fresh oregano and lemon make a real difference here, and the sauce keeps in the fridge a few days if you'd like to make extra.
