The Perfect Thanksgiving Dinner for Two

Our 2 Coots recipe for preparing the perfect Thanksgiving dinner with all the classic flavors, scaled down for an intimate dinner for two.

- (2-3 lbs) Boneless Turkey Breast
- (2) Turkey Drumsticks
- (2) Turkey Thighs
- (4) Turkey Wings
- Herbs & Spices (see recipe)
- Chicken Broth
- Butter
- Water
Directions
For an intimate thanksgiving dinner for two, we recommend to mix and match your favorite pieces of turkey, whether that be our Boneless Turkey Breast, Turkey Drumsticks, Turkey Thighs, Turkey Wings, or any of our other delicious cuts of Pasture-Raised Turkey.
For the Turkey (Choose Your Favorites):
- Boneless Turkey Breast (about 2-3 pounds):
- 2 tablespoons olive oil
- 1 teaspoon dried rosemary
- 1 teaspoon dried thyme
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 cup chicken broth
- Turkey Drumsticks (2 pieces):
- 2 tablespoons olive oil
- 1 teaspoon smoked paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried thyme
- Salt and pepper to taste
- 1/2 cup chicken broth
- Turkey Thighs (2 pieces):
- 2 tablespoons olive oil
- 1 teaspoon dried sage
- 1 teaspoon dried rosemary
- 1 teaspoon garlic powder
- Salt and pepper to taste
- 1/2 cup chicken broth
- Turkey Wings (4 pieces):
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup chicken broth
For the Stuffing:
- 2 cups stale bread, cubed
- 1 tablespoon butter
- 1 small onion, finely chopped
- 1 celery stalk, finely chopped
- 1/2 teaspoon dried sage
- 1/2 teaspoon dried thyme
- 1/2 cup chicken broth
- Salt and pepper to taste
For the Cranberry Sauce:
- 1 cup fresh cranberries
- 1/2 cup sugar
- 1/4 cup orange juice
- 1/4 cup water
For the Mashed Potatoes:
- 2 large potatoes, peeled and cubed
- 2 tablespoons butter
- 1/4 cup milk
- Salt and pepper to taste
For the Green Beans:
- 1 cup fresh green beans, trimmed
- 1 tablespoon butter
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
1. Prepare the Turkey:
- Boneless Turkey Breast:
- Preheat your oven to 375°F (190°C).
- Pat the turkey breast dry and rub with olive oil, rosemary, thyme, garlic powder, onion powder, salt, and pepper.
- Place in a roasting pan, add chicken broth, and roast for 1.5 to 2 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally.
- Let rest for 10 minutes before slicing.
- Turkey Drumsticks:
- Preheat oven to 375°F (190°C).
- Rub drumsticks with olive oil, smoked paprika, garlic powder, onion powder, thyme, salt, and pepper.
- Place in a roasting pan, add chicken broth, and roast for about 1.5 hours, or until the internal temperature reaches 175°F (80°C). Baste occasionally.
- Rest for 5 minutes before serving.
- Turkey Thighs:
- Preheat oven to 375°F (190°C).
- Rub thighs with olive oil, sage, rosemary, garlic powder, salt, and pepper.
- Place in a roasting pan, add chicken broth, and roast for 1 to 1.5 hours, or until the internal temperature reaches 165°F (74°C). Baste occasionally.
- Rest for 10 minutes before serving.
- Turkey Wings:
- Preheat oven to 375°F (190°C).
- Rub wings with olive oil, paprika, garlic powder, onion powder, oregano, salt, and pepper.
- Place in a roasting pan, add chicken broth, and roast for 1 to 1.5 hours, or until crispy and the internal temperature reaches 165°F (74°C). Baste occasionally.
- Rest for 5 minutes before serving.
2. Prepare Your Sides:
- Make the Stuffing:
- In a skillet, melt butter over medium heat. Add onion and celery, cooking until softened, about 5 minutes.
- Add sage, thyme, salt, and pepper. Stir to combine.
- In a bowl, mix the bread cubes with the cooked vegetables. Pour in chicken broth and mix until moistened.
- Transfer to a small baking dish and bake for 25-30 minutes, until golden and crispy on top.
- Prepare the Cranberry Sauce:
- Combine cranberries, sugar, orange juice, and water in a saucepan.
- Bring to a boil, then reduce heat and simmer for about 10 minutes, until the cranberries burst and the sauce thickens. Let cool slightly before serving.
- Make the Mashed Potatoes:
- Boil potatoes in salted water until tender, about 15-20 minutes. Drain well.
- Mash with butter and milk until smooth. Season with salt and pepper.
- Cook the Green Beans:
- Melt butter in a skillet over medium heat. Add garlic and cook for 1 minute.
- Add green beans and cook until tender-crisp, about 5 minutes. Season with salt and pepper.
Serving:
Plate your chosen turkey cuts with a side of stuffing, mashed potatoes, green beans, and a generous dollop of cranberry sauce. Enjoy a cozy Thanksgiving feast for two!
